While a standard dictionary will provide a straightforward definition (try m-w.com, Merriam Webster's site), your question is ultimately complex, since there are potentially many different ways of defining anthropology as well as different types of anthropology (cultural, biological, etc.).
I suggest starting with an encyclopedia or dictionary that focuses specifically on anthropology. This will allow you to go into greater depth than a regular dictionary but not so much depth that you won't be able to make sense of the explanation. You might try the 2002 Companion Encyclopedia of Anthropology, located on the third floor of Ekstrom (call# GN25 .C65 2002).
